ジョオウヤシ(Syagrus romanzoffiana var. australe)の果実の香気成分をジクロロメタン抽出法とダイナミックヘッドスペース法で補集し,キャピラリーGC-MSに導入し,分析した．抽出物ではエステルと有機酸が主要成分で,80成分が同定された．各成分の閾値と含有量から求めたオーダーユニットから,この果実の香気に寄与する成分はethyl hexanoate,ethyl acetate,ethyl butanoate,methyl hexanoate,hexyl acetate,3-methylbutyl acetate,ethyl octanoate,butyl acetate,nananal,(E)-2-decenal,hexanal,heptanal,hexanoic acid,butanoic acid,γ-decalactoneおよび1,2,3,4-tetrahydro-1,1,6-trimethyl-naphthaleneの16成分である．ヘッドスペース法では64成分が同定され,その96.2%がエステル類であった．
